I remember falling in love with Don Henrico’s buffalo wings and wishing I could replicate it at home. At that time I felt it was next to impossible because one, it looks difficult to do and two, the ingredients would probably be expensive. I endlessly read through forums hoping to find a simple recipe and after a few weeks I finally hit the jackpot, yey! It’s not as special as Don Henrico’s but it’s yummy nonetheless plus so easy to do. =) Thank you GirlTalk! So here goes:
You will need:
· 1 kilo chicken wings
· Fish Sauce
· Calamansi
· 1 or 2 eggs
· Flour
· Magic Sarap (optional)
· Cooking Oil
· 1 bottle Sweet and Spicy Sauce (i.e. Jufran)
· Sour Cream (optional)
· Scallions / Green Onions (optional)
How to make:
- Mix equal parts of fish sauce and calamansi
- Marinate the chicken wings for about 30 minutes to 2 hours
- While the chicken is marinating season the flour with a bit of Magic Sarap or any added flavor you prefer
- Beat the eggs.
- Bread the chicken wings. Dip them first into the beaten eggs then to the flour and Magic Sarap mixture
- Fry until golden brown and then set aside.
- Take another pan, pour all the contents of the sweet and spicy sauce
- Once heated, mix the sauce with your fried chicken wings
- Serve while hot.
TIP # 1: Don’t marinate the chicken wings for too long because the meat might turn too sour
TIP # 2: Do not overcrowd the pan when frying
TIP # 3: Should you want to take it a step further, you may serve this with sour cream topped with Scallions.
TIP # 4: If you can’t find sour cream you can buy Nestle cream, mix with a little calamansi. Let stand for a few minutes then add garlic and onion powder, then mix thoroughly.
